Here in Arizona when fishing in the White Mountains we often use bead headed flies and nymphs like the ones show below. Olive colored nymphs have caught us a number of pluse stopping maniac Cutthroat and Brown Trout. These fish when cleaned are full of tiny crayfish, some so tiny you can barely make out what they are. A bead head fly or nymph is just the ticket if you suspect fish are feeding on crayfish.
